Can I substitute applesauce for lard?
Q. I want to make an apple pie that calls for 1/4 cup of lard (for the crust). Can I substitute applesauce for this, or a combination of vegetable oil and applesauce? Would it drastically change the taste or texture of the crust? If so, are there any other substitutes? If not, how much applesauce and oil will I need? I'm thinking about peanut butter...anybody know if that would work?

A. No, you cannot use applesauce in your crust. If you don't want to use lard, Crisco shortening, butter or margarine, then you can use vegetable oil - probably the same amount. But I'd recommend you search for an oil based pie crust recipe and follow it. The texture isn't the same with oil vs. the others because it's a liquid. But oiled based pastry crusts are what you normally find in the stores and are fine - just not as flaky.

Why can you substitute applesauce for eggs in a cake?
Q. Look, I know that you can substitute applesauce for eggs, but I want to know exactly why. I'm doing a cake chemistry report for school and I need the answer as soon as possible!
Asked by sophiefisher97 - Sun May 31 17:22:41 2009 - - 3 Answers - 1 Comments

A. You can't sub applesauce for eggs - the eggs are the binding ingredient and when they bake up, that's what holds the cake together instead of being a sloppy mess. If you use applesauce - which doesn't cook to solid form - then you will have that sloppy mess. You CAN sub applesauce for oil when making a cake (not sure of the ratio, but I don't believe it's equal amounts). This is because the fruit keeps the cake moist which is basically what oil does. Cakes made with applesauce in place of oil don't taste as good, but they do 'work'.

Can I substitute applesauce for butter in a gingerbread cookie recipe?
Q. Every year we make gingerbread ornaments for christmas. I went to make the dough only to realize I'm out of butter. Can I use some of this huge can of applesauce instead? or should I just load everyone in the car and go get butter?
Asked by charityandrobert - Tue Nov 20 15:23:47 2007 - - 3 Answers - 0 Comments

A. Not sure if it will work on ornaments, but I dont see why not. It's not the butter that makes them harden anyway. I know if it doesn't work, u could always eat them!

A. Yes, BUT... I do this on a regular basis with my waffle iron...My daughter LOVES waffles on Saturday morning...Several years ago, I was traveling for business and the Hotel where I was at had a Belgian Waffle Iron in the Breakfast area...The batter was in pre-mixed 6 oz. cups...You poured the batter QUICKLY into the Iron, closed it and ROTATED the Iron 180 degrees...It had an automatic timer, when it beeped, take the 7" Waffle out quickly and eat it hot...Dependably crunchy on the outside, light and fluffy inside... After about 4 days of this at a Hotel, I asked the friendly hostess where to BUY a Waffle Iron like this...She scooted it out to look at the backside, sure enough, there was an 800 number...I wrote it down and called them.… [cont.]

Why do some recipes substitute applesauce for vegetable oil?
Q. What are the different effects, especially in baking?
Asked by Sweet Babu - Thu Dec 25 10:33:13 2008 - - 3 Answers - 0 Comments

A. Applesauce is used in place of vegetable oil in recipes to reduce the fat and calories because it keeps the baked product moist. In baking it's not quite the same texture, things are a little chewier without the added fat, but usually it's still very good.

Can you substitute pumpkin puree for applesauce in muffin recipe?
Q. This recipe is low-fat; it has only a few spoonfuls of oil. It calls for 1 c. pumpkin puree and 2 c. applesauce. Think it would be okay to use 3 c. of pumpkin and leave out the applesauce? All I have in the house is pumpkin. These are pumpkin spice muffins, by the way.

A. The best substitution would be applesauce. It's healthful and low in fat. 3/4 to 1 cup of applesauce can be substituted for 1 cup of oil or butter. You can also substitute (drained) crushed pineapple, bananas (mashed), and even fruit butters, such as apple or pear for oil or butter.

Applesauce as a butter substitute in brownies?
Q. Would that be at all possible? I know that butter is used somewhat as a leavening agent, but brownies are supposed to be flat(ter). Anyone?
Asked by celtic_tiger_19 - Thu May 8 16:29:37 2008 - - 7 Answers - 0 Comments

A. Not all brownies are flat. Some are more "cake" style (usually more eggs)... remember, though, that applesauce will make the brownies, cake, cookies, whatever much heavier (you can't cream it)

Substitute products exist with reduced fat and no fat and in different forms such as spreadable and liquid oils.
