Can I substitute applesauce for lard?
Q. I want to make an apple pie that calls for 1/4 cup of lard (for the crust). Can I substitute applesauce for this, or a combination of vegetable oil and applesauce? Would it drastically change the taste or texture of the crust? If so, are there any other substitutes? If not, how much applesauce and oil will I need? I'm thinking about peanut butter...anybody know if that would work?

A. No, you cannot use applesauce in your crust. If you don't want to use lard, Crisco shortening, butter or margarine, then you can use vegetable oil - probably the same amount. But I'd recommend you search for an oil based pie crust recipe and follow it. The texture isn't the same with oil vs. the others because it's a liquid. But oiled based pastry crusts are what you normally find in the stores and are fine - just not as flaky.

A. You shouldn't replace 100% of the oil with applesauce, your product won't turn out the way it's supposed to. You can generally substitute up to half the fat with apple sauce.

kind of applesauce for cake substitution?
Q. sweetened or un? Would the flavor of cake matter, I would like to make chocolate, my favorite, and I would like to try the applesauce. What about jello cake? Oh and I would also like to try the mayo trick sometime in the future. Can I use light mayo to make it less fattening? Hellmans makes that cholesterol free mayo, would that work? One more question how much of either would I put in the mix in place of the oil? Thanks!

A. I use unsweetened applesauce as a replacement for shortening in cakes, muffins, and cookies. No one notices, and they are very low cholesterol. It is a one to one replacement, and may need a little extra flour on a rainy day. I haven't tried they mayo trick. What does Hellmans (Best Foods) replace the cholesterol with? It may be worse! (Trans fats? Palm oil? Yuck!)

For snickerdoodles, what can I use to substitute for the butter (while keeping the good taste)?
Q. I'm planning to bake snickerdoodles for my family this weekend, but since I'm trying to make it a healthier snack (well, compared to the original recipe), I want to replace the butter with something else. What can I substitute (and how much in proportion to the butter)? I'm also trying to stay away from olive oil. Can I use applesauce? If I do, would I use it as a butter:applesauce, 1:1?

A. Don't think twice about eating two blueberry pancakes once a week. As you say, if you deprive yourself of something you love so much, you may end up binging on it later. Moderation in all things should be the goal, and two pancakes a week is certainly well within the bounds of moderation. I would like to suggest that you eat a lot of blueberries. They have been called a "superfood" by nutritionists, because of the huge amount of nutrients these little berries contain. They are also extremely high on the ORAC (oxygen radical absorbance capacity) scale. Bliueberries are just as nutritious frozen, and will keep for up to a year. I love my blueberry smoothies with low-fat milk and a banana. Sometimes, I put a raw egg in it too for… [cont.]

What's a Substitute for Eggs?
Q. I want to make pancakes but I don't have any eggs. What could I use instead? We have applesauce, would that work? I use that as a vegetable oil susbtitute. I was thinking of using mayonaisse, but wouldn't that taste gross? How much would I use of the substitute for two eggs? Would the pancakes taste fine without eggs? Thanks!!

A. You can replace 1 egg with 1 Tbsp of yogurt (plain or vanilla). The yogurt provides the binding compounds that are present in eggs; applesauce or milk or baking powder will NOT. For 2 eggs substitute 2 Tbsp of yogurt.

A. I don't know why you imagine baking soda/powder are unhealthy! Honey and maple syrup have just as much sugar calories as sugar. They may taste better though. I make my bran muffins with bran, wholewheat flour, eggs, buttermilk, just a little canola oil (which is THE healthiest fat you can consume) and a little brown sugar. And walnuts.
