In the culinary sense, flour is a powder made of cereal grains, other seeds, or roots. It is the main ingredient of bread, which is a staple food for many civilizations, making the availability of adequate supplies of flour a major economic and political issue at various times throughout history. Wheat flour is one of the most important foods in European, North American, Middle Eastern and North African cultures, and is the defining ingredient in most of their styles of breads and pastries. Maize flour has been important in Mesoamerican cuisine since ancient times, and remains a staple in much of Latin American cuisine.

Flour contains high proportion of starches, which are complex carbohydrates also known as polysaccharides. Leavening agents are used with some flours, especially those with significant gluten content, to produce lighter and softer baked products by embedding small gas bubbles.

The production of flour has also historically driven technological development, as attempts to make gristmills more productive and less labor-intensive led to the watermill and windmill, terms now applied more broadly to uses of water and wind power for purposes other than milling.

What flour is good for making pasta by my self?
Q. I bought a pasta machine. So I can make pasta by myself. However, I don't know what flour should I use. Also, There are not many shops selling many kinds of flours. If you know good flour to make pasta, please tell me!!!

A. First choice is semolina. You may have to go to a 'health food' store to get it. High gluten bread flour is second. Semolina is a hard wheat with naturallly very high gluten content. High Gluten bread flour has to be worked (i.e., kneaded) a whole lot more in order to develop the gluten. All purpose flour will sort of work, but I wouldn't recommend using it in the pasta machine. In order for the pasta made from all-purpose to stay together, it needs to be thicker than most pasta machines will make. And the texture will be definitely softer. I know people who do it regularly, however, rolling it out like making a pie crust, cutting in into extra wide noodles, drying on a cooling rack and using it in home made soups. It tastes… [cont.]

Can I use Self-Rising Flour as a substitute for All-Purpose Flour?
Q. I am stuck with Self-Rising Flour from when I was making cupcakes, and I have no all purpose flour. I don't want to buy any new flour until I am finished with this flour. Can I use Self-Rising Flour as a substitute for All-Purpose Flour? If so, how?

A. Yes. Just leave out the salt and baking powder that may be called for in your recipe... S/R flour aslready has that in it.

What is the difference between self-rising flour and cake flour?
Q. I attempt to make a pound cake and it didn't turn out right. Instead of using cake flour, I opt'd for self-rising flour. Could this be the reason my cake turned out hard and spongy? Can anyone give me a recipe for a cake that I can make from stratch? Thanks.

A. Cake flour is a low gluten flour. Gluten is a wheat protein that gives the bread structure and stiffness. Self-rising flour is just all-purpose flour with baking powder (or other leaveners) mixed in the flour. Your recipes was hard and spongy since you used a higher gluten flour and probably over-mixed (both act to toughen the pound cake). Spongy due to the leaveners in the self-rising flour. The leaveners create carbon dioxide which acts to create little bubbles in your batter... Yes, you are correct that the self-raising flour caused the problem.
