Q. Why do Eggs break so easy when in water?

A. Could be you are adding them to the water straight from the fridge - they should be at room temperature. Also, add some salt to the water when cooking the eggs, this will help the shells stay intact.

How do you mark eggs that a hen is sitting on?
Q. I have two banty hens sitting on a pile of eggs together side by side, but there are too many eggs under them to keep warm at once. Every day as more eggs are laid by other hens they scoop those in the pile and sit on those as well. I thought i would mark 6 eggs with stickers and call it good. That way every morning I can go get the fresh eggs and know which ones are fresh. Will the hens take offence to the stickers on the eggs? Are there any better ways to mark them?

How many medium eggs are 5 large ones?
Q. I've my boyfriend's parents coming over in a bit for dinner and I'm not sure if there's a big difference between medium eggs and large eggs. 5 large eggs, says the recipe. Can I use 5 medium or should I add one more medium egg? I'm cooking a flourless chocolate cake. It's supposed to be really easy so I'm hoping I can't eff this up. Why is it that I can spot a tiny flaw in a contract and save my client several million, but I can't cook?

If the concentrations fall too low, the pickling process will not retard the decay process. You can 'top up' any salt, but for the vinegar, you might want to add a bit of the 'concentrated pickling vinegar' or 'vinegar essence'. You might want to bring the liquid to the boil (before you top up) if you are concerned about hygiene, but the acid and salt are the long time traditional 'disinfecting agents' anyway, which is WHY they were used from ancient times! Shouldnt eggs be cooked in recipes? Is there the same danger in egg subsitute?
Q. My mom would never serve something that was not cooked that contained raw eggs. Like a pudding pie, egg nog etc. Does egg substitue have the same issue? I have been seeing recent recipes using eggs that are not cooked. I would think that with all the raw food warnings this would be a problem. Does keeping the food with the egg cold make a difference?

A. You'll want at least a dozen each. The best ones to buy are goose eggs (the big purple ones) but it depends on where you live - some areas don't sell them. After you get your eggs, leave them out in the sunshine for at least a few days. This will get them nice and stinky! I have axolotl eggs. How can I tell which eggs to remove due to them being unfertilised or gone bad?

Why do you add eggs to flour?
Q. I've noticed in recipes that when baking all purpose flour requires eggs. To my understanding self rising flour is just all purpose without the yeast. I can see why you need to add yeast, but when converting a recipe from all purpose flour to self rising, do I still need to add the egg? What will happen if I start adding an egg to my buttermilk biscuits?

Why do my Discus keep eating the eggs on the second day of spawning?
Q. Well after dealing with the problem of my Male Discus. My other pair has spawned and for the fifth time on the second day of taking care of their eggs they have ate all them. And every time its on the second day they don't go white or anything but they still eat it. I have tested all the appropiate tests for it too see if there is any ammonia or nitrates or anything that would make it eat their young but they all came back normal. They are kept in a simple tank with gentle filtration with nothing disturbing them like loud noises or other fish in the tank. They also take really good care of their eggs as they take it in turn to feed and fan the eggs so i don't know whats wrong. Also i think that the eggs are fertilised as they don't turn… [cont.]

If they are young discus, I would give them another chance before taking the eggs and hatching them yourself. Raising discus fry is very difficult because part of their feeding when they are very young is actually off the mucous excreted on the sides of the parents. If your tank is in a well traveled part of the house, they could be bothered by pets or people walking past the tank. Try taping some black poster paper on the front and one side (the side closest to the eggs) of the tank next time they lay eggs to cut down on outside motion. If your tank is in a well traveled part of the house, they could be bothered by pets or people walking past the tank. Try taping some black poster paper on the front and one side (the side closest to the eggs) of the tank next time they lay eggs to cut down on outside motion. I would also put a small night light (like for a kid's bedroom) next to the tank so they can see… [cont.]

Can I bake with eggs that expired on April 1st?
Q. Hello all. I am 27 weeks pregnant and am REALLY craving some home made cookies. The only problem is that the only eggs I have say sell by April 1st. I would probebly risk it if I wasnt pregnant but am conserned about getting food poisoning. Are these eggs okay to bake with? How can you tell if a egg is expired? Thank you for all your answers.

Q. Hi I just recentlly bought duck eggs thru the mail. But how long do they last via mail? Its been awhile and the seller want to refund me and give me new eggs. Im just curious if they would still be good if they arrived? It's been 4 or so days and NO they are not scammers they are trustworthy sellers on eBay it's just the mail has been slow, And I'm not Killing ducks, I hatch out them! I just wanted to get some REAL advice but so far no luck... PLEASE don't answer if you aren't giving me valuable info. I just want to know many days (ex:3, 4, or 5, etc)?

A. A lot depends on how much they have been bashed around in the mail, but they might still be ok after four days. It's not killing ducks! All it is is fertile eggs sent through the mail to be hatched out, i.e. allowed to live!

A. Place an egg at the bottom of a glass full of water. Eggshells are porous, and over time they dry out, letting air in and moisture out. So... * If the egg lies at the bottom on its side, the egg is pretty fresh. * If the egg sinks, but with one end up, it's getting old but is still edible. * If the egg floats at all, it's time to go buy some fresh ones. If you prefers egg whites, then save some time and money by buying eggs in bulk and separating them right away. Egg whites freeze very well and can even be kept up to three or four days covered in the refrigerator.
