chocolateDefinition from Wiktionary, the free dictionary Jump to: navigation, search WOTD - 23 December 2006From Wiktionary under the GNU Free Documentation License. Chocolate (pronounced /ˈtʃɒklɨt/ ( listen) or /ˈtʃɒkəlɨt/) comprises a number of raw and processed foods produced from the seed of the tropical Theobroma cacao tree. Cacao has been cultivated for at least three millennia in Mexico, Central and South America, with its earliest documented use around 1100 BC. The majority of the Mesoamerican people made chocolate beverages, including the Aztecs, who made it into a beverage known as xocolātl, a Nahuatl word meaning "bitter water". The seeds of the cacao tree have an intense bitter taste, and must be fermented to develop the flavor. After fermentation, the beans are dried, cleaned, and roasted, and the shell is removed to produce cacao nibs. The nibs are then ground to cocoa mass, pure chocolate in rough form. Because this cocoa mass usually is liquefied then molded with or without other ingredients, it is called chocolate liquor. The liquor also may be processed into two components: cocoa solids and cocoa butter. Unsweetened baking chocolate (bitter chocolate) contains primarily cocoa solids and cocoa butter in varying proportions. Much of the chocolate consumed today is in the form of sweet chocolate, combining cocoa solids, cocoa butter or other fat, and sugar. Milk chocolate is sweet chocolate that additionally contains milk powder or condensed milk. White chocolate contains cocoa butter, sugar, and milk but no cocoa solids. Cocoa solids contain alkaloids such as theobromine and phenethylamine, which have physiological effects on the body. It has been linked to serotonin levels in the brain. Some research found that chocolate, eaten in moderation, can lower blood pressure. The presence of theobromine renders it toxic to some animals, especially dogs and cats. Chocolate has become one of the most popular food types and flavors in the world. Gifts of chocolate molded into different shapes have become traditional on certain holidays: chocolate bunnies and eggs are popular on Easter, chocolate coins on Hanukkah, Santa Claus and other holiday symbols on Christmas, and chocolate hearts or chocolate in heart-shaped boxes on Valentine's Day. Chocolate is also used in cold and hot beverages, to produce chocolate milk and hot chocolate. Around three quarters of the world's cacao bean production takes place in West Africa. GNU Free Documentation License Can you substitute chopped chocolate chunks for chocolate chips? Q. I couldn't find chocolate chips in my local supermarket. And i needa make chocolate chip cookies for tmrw. Can i substitute them with chocolate chunks i cut from a bar of chocolate? Will it taste the same? Look the same? If it will become too sweet, (cuz i bought it already) can i subtract the amount of sugar i add into the cookie dough? Asked by jEsSy1217 - Wed Apr 7 09:51:58 2010 - - 8 Answers - 0 Comments A. Yes you can, and in fact I prefer to make my chocolate chip cookies this way! I usually break the choclate into pieces and then put them into a plastic bag and bang them with a rolling pin a bit to break them up a bit further. I like some chunky bits and some smaller bits. As usual, I just stir them into the cookie mixture at the end. I wouldn't subtract any sugar but as this will change the way the cookie dough mixes and bakes. Answered by greenberyl - Wed Apr 7 10:13:47 2010 If using melted chocolate, is there something I can add to make the product last longer? Q. I've noticed that when I melt chocolate for chocolate molds or other treats, after a few days or so the chocolate gets spotty. It'll start looking like really old chocolate and more importantly, the taste isn't as great as it was initially. I just want to know if anyone can suggest an extra ingredient that can avoid this issue. Thanks! Asked by lokelani607 - Tue Apr 14 17:42:48 2009 - - 2 Answers - 0 Comments A. You need to temper the chocolate. It is simple and will eliminate all these problems. This is how I do it and I have no problems. Using a candy thermometer melt the chocolate in a double boiler over hot (not boiling) water until it reaches 115 to 125 F. Let the chocolate cool completely and then reheat to molding or dipping temperature - usually between 80 and 90 F. Keep the thermometer in the chocolate so you can adjust the temp as needed. Also make sure you are buying good quality molding chocolate. Answered by Hawkeye - Wed Apr 15 17:07:59 2009 How much is a chocolate square when I am baking?
Q. Some recipes say to use semi-sweet chocolate squares, but I usually buy chocolate chips because they are cheaper. What amount of chocolate chips is equivalent to 1 chocolate square? Asked by Trix_R_not_4_kids - Wed Sep 12 12:27:43 2007 - - 4 Answers - 0 Comments A. A square of chocolate is usually one ounce. If you've got a 10 oz. bag of chocolate chips, you'd need 1/10 of the bag.
