Cake is a form of food that is usually sweet and often baked. Cakes normally combine some kind of flour, a sweetening agent (commonly sugar), a binding agent (generally egg, though gluten or starch are often used by lacto-vegetarians and vegans), fats (usually butter, shortening, or margarine, although a fruit purée such as applesauce is sometimes substituted to avoid using fat), a liquid (milk, water or fruit juice), flavors and some form of leavening agent (such as yeast or baking powder), though many cakes lack these ingredients and instead rely on air bubbles in the dough to expand and cause the cake to rise. Cake is often frosted with buttercream or marzipan, and finished with piped borders and crystallized fruit. Cake is often the dessert of choice for meals at ceremonial occasions, particularly weddings, anniversaries, and birthdays. There are countless cake recipes; some are bread-like, some rich and elaborate and many are centuries old. Cake making is no longer a complicated procedure; while at one time considerable labor went into cake making (particularly the whisking of egg foams), baking equipment and directions have been simplified that even the most amateur cook may bake a cake. From Google News Search: "Cakes" How to stop cakes having a hard crust when baking? Q. Whenever I bake cakes, biscuits etc. they end up having a dry hard crust on top. My oven is electric and not fan assisted with the heat coming directly from above which I think might be the problem. Is there anything I can do about it? the grill and oven elements are both at the top of my oven... it is a cheap cooker. I will try these suggestions though. Asked by Vicky - Sun Oct 4 19:58:31 2009 - - 3 Answers - 0 Comments A. A standard electric oven should have the heat coming from the bottom when it's turned on to Bake. It comes from the top when turned on to Broil. Make sure your rack and pan are in the middle of the oven. Your oven temp might be off. Get an inexpensive oven thermometer and check if it reads properly. If you're using glass pans or dark interior pans, lower the temp by 25 F for any baking. I want to start making those dressy individual cakes for sale, would it be possible to make those from a large 9" layered cake recipe? Am I making sense? How would I adjust the temperature and baking time? Asked by Befuddled_baker - Mon Jan 21 00:48:01 2008 - - 4 Answers - 0 Comments A. If you are talking about making a cup cake/patty cake/muffin sized cake, then, drop the temp by about 10 degrees C and cook for about 12 min and check. I would probably add a bit more shortening too, to make sure they don't dry out. Answered by Anna G - Mon Jan 21 00:53:56 2008 Is there a way to make homemade funnel cakes without using eggs?
Q. I want to make homemade funnel cakes for my family but all of the recipes contain eggs. I am a vegan and wanted to know if there is a way to make homemade funnel cakes withouth the use of eggs? Asked by Diamond - Fri Mar 28 15:28:23 2008 - - 2 Answers - 0 Comments A. There are egg substitutes that are vegan, does your local store carry any of them? Ener-G egg replacer is the one I've seen mentioned on different web sites and there was something listed on about.com. Other than that, I don't know. Good luck!!
